Gluten Free Basil Pesto

Ingredients
  

  • 3 cups Basil, packed
  • 1/4 cup Pine nuts toasted
  • 2-3 cloves Garlic
  • 1/3 cup Olive Oil
  • 1/4 cup Parmesan Cheese (Gluten Free) shredded or shaved
Salt and pepper to taste

Method
 

  1. Toast pine nuts over medium heat, shaking pan occasionally to prevent burning.
  2. Wash basil, pat dry, remove any large stems.
  3. Place basil, garlic, toasted pine nuts, and parmesan cheese in the bowl of a food processor.
  4. Pulse a few times, then slowly add olive oil. Add and salt and pepper to taste. Scrape down sides of the bowl as needed.
  5. Store in fridge or freezer in tightly sealed jar with a drizzle of olive oil on top.
