Crazy Jane’s Salad Dressing

I have basically stopped buying salad dressing, thanks to this wonderful recipe! It is so refreshing and versatile. You’ll wonder how you ever enjoyed a salad without it! My amazing mother-in-law, Rosina, taught me how to make this several years ago. I have adapted it to remove the added sugar. On occassion, I will add a little pinch of sugar or honey, but typically I don’t feel the recipe needs it.

Crazy Jane’s Mixed Up Salad Dressing

Ingredients
  

  • 2 tbsp minced onion
  • 1 tbsp Crazy Jane’s Mixed Up Salt
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/4 cup red wine vinegar
  • 1/4 cup avocado oil
  • 1/4 cup canola oil

Instructions
 

  • Place minced onion in bottom of jar.
  • Add Crazy Jane’s Mixed Up Salt, Garlic Powder, and Onion Powder.
  • Allow the seasonings to “sweat” the onions for about an hour.
  • Once the onions have had a chance to sweat, add the vinegar and oils to the jar. Firmly place a lid on the jar and shake vigorously to combine dressing.
  • Drizzle over salad and enjoy!

Notes

If you don’t have time to allow the onions to sweat, you can take a spoon and sort of crunch them up to release some of their natural flavors. I often use this approach. Simply mince the onions, put them in the jar, put the seasonings on top, and crunch/mash slightly with a spoon. Ideally, you will let them sit at this point for a couple minutes while you cut up the salad, then add the vinegar and oils.

I’ve made this dressing in advance and allowed the onions to sweat and have also prepared it on the fly. Both ways provide an excellent, refreshing flavor. Allowing the onions to sweat will obviously bring more of that flavor forward, so you may want to cut back on the onion powder a bit. I typically don’t have a chance to make this in advance, so I use a whole teaspoon of onion powder.
