About Me

Hey there! My name is Meredith. I’m a wife, mama of 2 little girls, nurse, and a WVU Mountaineer. I have become a bit obsessed with food after being diagnosed with Celiac Disease in 2015. I’ll be the first to admit, I haven’t always been very health conscious. I know, seems strange coming from a nurse! Learning I have Celiac Disease has made me a believer in food and nutrition as medicine. Our bodies really are a direct reflection of how we treat them. This is true from how we strengthen our bodies and minds to what we fuel them with. This is a daily struggle for me. I tend to eat like a toddler and could totally live on carbs and cheese! And as for the gym…let’s just say we are learning to be friends. I strive daily to make my little part of the world a healthy place, free of gluten and negativity. I hope in sharing my journey I can help others better themselves, while also holding myself accountable.

Everyday of this beautiful life is an adventure! My days are filled living the mom-life and being a nurse. I currently work in wound care, but also enjoy working in brain injury/ neuro. I started out in acute rehab and became a Certified Rehabilitation RN in 2017. My profession certainly helps me manage having an autoimmune disease. Living gluten free isn’t easy, but it is vital for me to maintain my health and to live comfortably in my own body. Fortunately, I’ve learned to cope with most of the challenges. I don’t have all the answers, but I’m excited to share what I’ve learned along the way.

In my spare time, I’ve been known to play Martha Stewart or do my best Bob Villa impression. I absolutely love hanging with my family, fixing things around the house, and hosting parties! I’m always on the lookout for a DIY project, a new recipe to try out, or something to organize. I’m a Virgo, so striving for perfection and order are major driving forces in my world. I’m not saying I achieve that often, but I sure wake up everyday trying like hell to!

And the icing on my crazy little cupcake…I am a die-hard West Virginia Mountaineers’ fan! That’s right, I bleed blue and gold. One of my silly past times is shopping for all things Dub-V. I have acquired a stupid amount of WV garb over the years, clear down to my official tube of Mountaineer chapstick. My body may be in Texas, but my heart is forever in West Virginia!

Thank you for joining me on my quest for gluten freedom! We all need a safe haven and I’m happy to share mine with each of you. Take me home, country roads!
